Pink Cake

As part of my Smiley Saturday Swap Gift from Ann, I received a packet of pink jelly and a recipe for using that jelly to make a pink cake. At the time I said I would share the recipe with you once I had made one so I could photograph it for the post.

Today is the day I finally get around to making my pink cake.

Pink Cake

Doesn’t it look beautiful? You know, I never thought of using jelly crystals to colour (and flavour - cos you can taste the flavour) a cake. I’ve always used plain old boring food colouring.

As promised, here is the recipe so you can make your very own:

PINK CAKE

125g butter, softened

1/2 cup castor sugar

3/4 pack pink jelly crystals (I’m sure you could substitute to make whatever colour you liked)

2 eggs

2 cups self raising flour

1/2 cup milk

Mix together butter, castor sugar and jelly crystals

Add eggs and mix

Stir/Fold in flour and milk

Bake at 180C for 35-45 minutes

PINK FROSTING/ICING

Combine butter, icing sugar, 1-2 tsp jelly crystals and hot water to make icing.

Sprinkle the remaining jelly crystals over the icing.

And now for the most important part, the taste test!!!!

I didn’t even wait for the icing to set before cutting it.

And the verdict???? It’s delicious!!! I’m not a huge cake eater normally (unless it’s chocolate mud cake with cream) but this was so light and tasty. The raspberry jelly crystals have flavoured it but it’s not an overpowering flavour. Mmmmm…..I gotta stop looking at this photo or I’m going to go eat another piece. Wink

I’m wondering….does anyone else have a “pink” recipe that they’d care to share? I’d like to try some other pink delicacies (sweet or savoury) and feature them here.

    Hi Lightening,
    Happy Thursday. Yum. Pink cake. Very pink. That Brand of Jelly crystal gives the best colour. I suppose you could use food colouring but it is not as much fun. You don’t get that “pink taste” and sparkly pink top.

    Ooh, that’s so pretty! Going to have to try that one out, I’m thinking a nice lime cake could be quite amusing.

    Nigella has done some fabulously pink things on one of her shows, including a shockingly pink beetroot soup. Tracked down the recipe on Ch4’s website, shame there’s not a pic of it… http://www.channel4.com/food/recipes/chefs/nigella-lawson/spiced-pink-soup-recipe_p_1.html

    The greek salad with watermelon looked yummy too.

    Lauren - Beetroot soup - sounds interesting although I’m not a big fan of beetroot. Wonder if you can taste the beetroot???

    Ann - I agree! It is much more FUN with jelly crystals. I’m going to try some other colours/flavours, just for fun!

    oh wow what an awesome looking cake!
    I am stumbling this so I can find the recipe again when it is the Twinadoe’s birthday - I think you could use this recipe to make THE BEST kids birthday cakes!!!!

    Now if food colourings didn’t send my daughter completely hyper I would so make this! Sounds delish.

    Wow. That is a gorgeous pink cake! I love the intensity of the color. Very nice! I haven’t heard of the jelly crystals, though.

    Kate - thanks for the stumble. :) It generated a nice traffic boost for me. :)

    Bettina - does it flavour the product you’re colouring?

    Magpie - I think that jell-o would be the same as jelly. It’s like sweet, flavoured gelatine.

    Dee - yeah, the colouring side of things, not so great. I’ve been lucky that my kids only react to a few colourings and jelly isn’t one of them (although some pink ice creams do set them off - I should investigate the differences one of these days).

    Kellypea - With jelly crystals, or you have to do is add boiling water, stir and set in the fridge and you get jelly (or jello).

    I forgot the “jelly” is another word for “jam” overseas. What I’m talking about here is this sort of stuff: http://mydinnertable.typepad.com/home/2007/02/i_love_jello.html

    The crystals are just a quick and easy way to make it. But can also be used in other recipes, like this one. :)

    I’ve had this blog article hovering in my blog lines for ages. It is Annie’s 5th Birthday next week and today I showed her your pink cake and she has agreed we can make it for her birthday.
