Let the Zucchini Lovefest Begin
These are my latest zucchini pickings. It would seem being away for a few days can result in overgrown zucchini!!!! The largest of these is 45 cm long!!!! It’s unreal!
Here I was thinking that my zucchini crop was coming to an end. Turns out they’re a plant that just keeps on giving! Awesome!!!! 
Now, I know there are HEAPS of great recipes out there for using zucchini.
So, I thought it would be GREAT to have ourselves a little “zucchini lovefest”. This works a little like a carnival (without using the carnival submission website).
All you need to do to join in this little lovefest is post your favourite zucchini recipe on your blog and send me the link to it. I know some of you have already posted zucchini recipes on your blogs. Send in the links to those. If there is a zucchini recipe you LOVE already posted somewhere, it’s fine to send me that link too. If you don’t currently have a blog but would like to share a favourite recipe, simply send me the recipe and I’ll post it here.
I’ll also be trawling the web for some great suggestions for using zucchini.
I’d like to post my “zucchini lovefest” on Thursday so if you can get the links to me ASAP that would be fantastic!!!!

Not a big zucchini fan, think I ate too much zucchini slice once when I was out roo hunting with friends. We forgot to pack anything else. Didn’t taste so great by the end of the day bashing around in the back of the 4WD.
OTOH grated up zucchini in spag. bol. is gold for getting veggies into kids. My girls can notice most veggies I hide in spag bol but not the zucchini because it dissolves so well.
I have a few recipes but have to go hunting! One off the cuff which I use especially with those large zucchini’s (which my dad thinks are meant to be picked like that so I am used to them now)…. is a quick recipe that makes a nice saucey type addition to snags, snitzels, or just heated up like chunky soup. It also makes a nice type of stuffing if placed in a casserole dish , baked then covered with breadcrumbs. Yummo. My tastebuds are watering.
I cut the washed zucchini into rings about 1.5 cm wide (maybe cut in half if diameter is huge) , roughly dice onion and tomatoes (good for those ones nearly past due date or patchy skins) and place with a little oil and water in a saucepan along with some pepper, salt, and some mixed herbs or similar. Cover and simmer till soft or just cooked. Can thicken with cornflour or simply serve as is. I have also used this to add to spag bolog, and a pasta bake I make from basics. Noone ever notices.
You can always freeze this and use later… it last ages and is handy come casserole time in winter. You may need to add more spices though as it can go watery.
My mum makes a zucchini and pasta relish which is very tasty if one can handle the colour!

I’m pretty sure I have it river (will check in a minute). If you filled in the comment form I included it would have gone straight to my mailbox rather than posting as a comment.
We being non wheat/gluten eating as a family, dont often get nice things like gravy (i have gluten free gravy packet for DS but I cant stand it), however I found by accident that putting sliced zucchini in to cook in the meat juices after the steak had browned, resulted in my meat juices thickening up into a slightly runny gravy, that was totally wheat/gluten free (meat juices, zuchinni starch and a hint of salt) as well as being homemade (and the zuchinni homegrown too). So I had a bonus to my meal, gravy flavoured zuchinni slices, and actual gravy to go on the meat.
We also like dicing it up with some onion, tomato, pumpkin etc and sauteeing it (lol sounds fancy and hard work but its all just chucked in the frying pan and simmered in its own juices til soft and delicious lol) and then serving on top of rice with whatever meat/chicken etc we are eating.
Works well in savoury mince and in meat patties as well.

Zucchini is one of my all-time favorite veggies! I wish I had some to cook up right now. I just cooked up a batch of zucchini muffins made with shredded zucchini and pineapple which are nearly all gone already LOL! I am a total newbie at gardening. In fact, I am just beginning my very first vegetable garden in years. A neighbor swears by Espoma Plant Food which is very reasonably priced online at
