Easy Quiche

Just as the title suggests - this is a nice and EASY quiche recipe.  My in laws gave me this great recipe book from the Huon Valley in Tasmania (any Tasmanians reading this?  Big wave to you!).  It has a lot of FOOD recipes in it - as opposed to all that fancy stuff that no-one in our family will eat.  The page on which the quiche recipe is printed is covered in splatters and half falling out.  So it’s obvious it’s a well used page!  Smile

EASY QUICHE

4 eggs

1 cup diced bacon

1/2 cup grated cheese

1/2 cup SR flour

1 cup onion

1 cup evaporated milk

1 cup fresh milk

salt & pepper

Mix together, bake in moderate oven until set (about 45 minutes).

Lightening’s Variations and Comments:

* I usually make a double mix of this.  That works great in a larger size dish or 2 pie dishes.

* Add whatever vegies you enjoy in quiche

* This is one of those pastry-less quiches where it forms it’s own thicker base on the bottom of the quiche

* Instead of evaporated milk I use 1.5 cups full cream milk powder with 4 cups water in a DOUBLE mix (halve this for a single mix).  Works out cheaper and more convenient than keeping evaporated milk on hand.

    … but but but … I adore pastry!

    And my favourite (pastry-bottomed) quiche contains asparagus and silver-beet (although it could be spinach as I can never remember what to call it).

    In the past I’ve tried recipes that use evaporated milk and the only one I still use is the melt-in-the-mouth chocolate fudge one. Everything else tastes terrible to me so I’ve ditched them all in favour of whole milk recipes, or those that use cream or condensed milk. Probably explains my cholesterol level. Must remember to eat less of those things. Adding lettuce to the shopping list now……..

    Glad to see there are at least a couple of Tasmanians (or ex-Tasmanians) reading. :-)

    Julie - I know what you mean about pastry. I like it too. But not mad keen on making it. LOL.

    River - I’m a fan of using “whole” foods rather than reduced fat anyway. As for cholesterol levels…..I’m not too sure I agree with the current stance on that anyway. But I’m no doctor and have never had mine checked…..
