What’s For Dinner Mum?
Monday – Lightly crumbed fish fillets toasted to a golden brown and served with crunchy potato wedges and a variety of lightly steamed vegetables.
Had to yank gently remove these from DH’s loving clutches last night when he had the grand idea of having them for tea last night. Thankfully I’d already started a rough draft of the week’s menu plan and could prove to him that I wanted them for tonight. Nothing to do with the fact that they’re a “chuck in the oven” variety of cooking and why should he get it easy?
Tuesday – Mum’s gotta finish her Christmas shopping so will be throwing something disgustingly unhealthy but probably to your liking in your general vicinity.
Yes, I’m planning on bringing home take away. Or better yet, if I take long enough, Granny will feed the kids and save me the effort, $$ and guilt. 
Wednesday – Lovingly prepared spaghetti Bolognese sauce yanked out of the freezer and stuffed into the microwave. Served over spiral pasta because mummy hates the mess you make when she serves spaghetti and lovingly topped with grated cheese in the hopes of disguising all the veggies in the sauce.
Thursday – I don’t know yet and hopefully if I procrastinate long enough daddy will come in and work something out so I don’t have to.
Friday – a mixture of finely minced who knows what, carefully encased in a clear packaging made of “I don’t want to know what”, slapped onto a square white slice of “processed the bajeebers out of” wheat mixed with yeast and a plethora of nasty preservatives and topped with lashings of dead horse.
How’s that for a tasty description? Mmmmm…..can’t wait to think I might eat at home before we go out. It’s the annual community Christmas Tree where all the kids are hyped up on end of school year, Christmas is near excitement coupled with too many lollies and the fact that Santa will arrive any minute.
As parents we get the privilege of paying for some piece of crap lovingly selected toy that Santa gets all the credit for. Of course, the year I shopped for the presents they were FABULOUS!!! LOL. You should have seen the looks on other shoppers faces watching two of us struggle with 3 overflowing trolleys full of toys. “Yeah, we have 23 kids stashed at home and really WANT 6 of the same toy!!!” Even funnier when I lost my partner in crime shopping and had to request the front desk call me up. You see, she and I share the exact same name (married to cousins). Even stranger to stand by the front desk and hear them call “me” to come to the front desk. Anyway, it was FUN spending everyone else’s money!!!!
Oh and for those not in the “know” - dead horse is Australian slang for tomato sauce (bit like ketchup) so please don’t call the RSPCA (or whatever animal or child loving group you have) and complain that I’m feeding my kids dead horses.
Weekend - Dunno lovingly served with freshly steamed dunno and maybe even some dunno freshly picked from our garden.
Can you tell my menu planning is not really inspiring me at the moment? LOL. I’ve gone 2 weeks without even writing a menu plan which has kind of sucked because then I’ve had to make decisions every day (I HATE deciding what to have for meals). So I thought I’d be really good and menu plan this week. *sigh* 
Help a girl out: I need some suggestions on what I could serve for Thurday night, Saturday night AND Sunday night. Preferably easy stuff as this week is “nightmare last week of the school year” week so rather busy. Please leave all your wonderful suggestions in the comments section.

Darn it!!!!! Here I sit at my desk with a virtually blank shopping list and one idea of what to cook for dinner. So the plan was to pop over here for some inspiration cause Lightening always has a menu plan :).
And you are apparently as short on inspiration as I am. Oh dear, this does not bode well for the week does it. If its any help the one thing that I have so far is corned beef in the slow cooker - minimal effort there. And by request from DS.
My biggest problem is we cook 90% of our meals on the BBQ and with this stupid weather ATM I can’t plan too far ahead as the BBQ isn’t under cover so can’t use it in the rain. Lots of things on the BBQ aren’t as easy/yummy inside and way messier.
I will pop back here if I get any blinding bolts of inspiration, but don’t hold your breath.

I haven’t had one last week either and have really struggled.. Probably won’t have one this week either!
Now that’s a menu plan I can relate to. LOL
I’ve been experimenting with stir fry, using sausages instead of the strips of chicken or beef. My children love it.
My other summer fav. is risotto, easy to make and yummy as left overs.

I’ve been doing a lot of chicken nuggets or fish fingers and salad’s lately. Easy and quick and light. Dunno if that’s any help to you.
We do the spiral pasta with spaghetti too - easier to eat and less mess.
Perhaps you should could fill up on some fruit before the party so that there is less room for junk when you get there.

Marita - interesting stir fry variation. One my kids might actually eat (they don’t like to have to “chew” meat). We’re not fans of Risotto but you have reminded me that Fried Rice is always a fave so that might work for Thursday. You’ve also reminded me to add a kg of bacon pieces to my shopping list for tomorrow. Thanks.
Bettina - thanks for the sugggestions. Problem is at the moment I have a freezer full of “real” meat. Meat which actually requires me to do something with it which is just useles when you have the “don’t wannas”. I have half a COW in there - literally!!!! Good idea with the fruit! Glad you’re still enjoying the new blog. It makes me smile every day when I open it!
Ok… I have to switch my brain to summer food, because I am in Michigan and all I am thinking is soup. lol
Some of our summer favorites:
- Anything grilled - burgers, hot dogs, sausages, etc.
- Burritos - toss the beans into the slow cooker with onion and garlic. When cooked, smash them and serve on tortillas with your favorite toppings.
- Greek Pasta Salad with Feta and Chicken
- Chicken and Black Bean Enchiladas
- Thai Peanut Noodles
- Salsa Sloppy Joes

One recomendation for dinner is baked bean jaffles, they are dreadfully easy and nutritious enough (esp if you use wholemeal bread). Or our other favorite at the moment is Holy Eggs. Basically you butter a slice of bread - cut out the middle with an egg ring. Put bread in pan put egg in Hole and cook, flip to do the other side once the egg is hard enough to withstand turning. You also throw the middle in the pan and then can use it as a “hat” over the egg. Ours tend to get some tomato sauce in between egg and hat.

I’m sure the kids would think that’s great. I was given some eggs yesterday (chooks aren’t laying yet) so we could do something like that. I never think of something like eggs but they are pretty much a meal in themselves nutritionally. And the kids love them! (Unfortunately they don’t eat baked beans - would be good if they did!)
Breakfast dinner! I was going to say scrambled eggs on toast with baked beans but if they don’t like baked beans, that’s out. But the Holy Eggs idea sounds great… do they like grilled tomatoes or mushies because then you could add in some vegetables? Or if you did an omelette you could add in veggies. Also toasted sandwiches are always a winner in our house when we just can’t be bothered.
My menu plan will be up later tonight - I was going to suggest fried rice or putting a “roast” in the slow cooker. You can then slice or shred it and use it as a filling for roast meat rolls with gravy

Mince up some of the meat and make hamburgers or rissoles ( recipe is on my blog) Love your new website by the way - forgot to add it to my google reader but I have now

Homemade burgers. Salad components in bowls, let them add what they like.
Bacon & egg sandwiches.
Pancakes.
Do a sausage sizzle.
Pizza base with sauce already on it, bowls of toppings, let everyone assemble their own? Use individual bases?
Salad sandwiches.
Toasted sandwiches: Ham&cheese, ham,cheese &pineapple, cheese&tomato, baked beans with cocktail franks sliced in.
Desserts? Fruit, Fruit, Fruit. Apple pie, Banana split, Strawberry yoghurt.
Have you ever tried potato cakes? (grated potato&onion, a few other ingredients), serve with lite sour cream, dead horse for kids who don’t yet like the sour cream option.

Yes, I should use my slow cooker. I’ve been good at forgetting to put it on early enough lately when I’ve planned to use it. Bad me!

I remember my dad making those grated potato thingy’s when I was a kid. I’ve never quite been able to get the hang of how to keep them together. I know he added egg and milk but mine just end up falling to pieces!!!
OK for half a cow you need things like stroganoff and if your kids don;t eat the mushrooms then pull them out before serving. This can be done in the slow cooker and add the sour cream before serving. Also another beef one for the slow cooker is beef burgundy. Easy peasy. Let me know if you want a recipe. Or if you like spicy try Cajun beef salad. I use rump and cut it into thin strips like for a stir fry. Put the cajun seasoning on it and stir fry till just cooked. Then add it to a salad already on a plate waiting with some crusty rolls. And of course your version would be salad from the garden. Mmmmm yummy.
And on the days that you really feel like a Domestic Goddess you can have this ready to go earlier in the day. Cut the meat up, season it and bung it in the fridge, make up the salad and leave that in the fridge. Voila - Dinner!!!!!! And serve it with a balsamic dressing (if you like it) otherwise any salad dressing will do.
Will see if I can come up with other minimal effort recipes for half a cow for you. If so I will let you know

I have nothing this week, half the week is roast in the slow cooker, and the other half is eating at _____ party for which I have to take _____, but I’ll get there.

Another great idea for meat is curry, works especially well cooked in the slow cooker and you can add heaps of veggies.
I find curry tastes best prepared the day before and left to mature, the flavours really pop then.
L, when all else fails, get out the bbq. OR…go to my post today about menu plans for the week - you’ll find not one, but two! You go girl. I hate menu planning, but I hate it even more when there’s no plan. Lisa x

Thanks Marita but the only curry that ever gets eaten here is in curried egg sandwiches and then only DH will eat those! It makes “simple, chuck in the crockpot meals” rather limited.
