Try making a salad with kidney beans, coriander, red onion if you like it raw, lemon juice and olive oil as a dressing. I think that it is not as off-putting as some of the other legumes as they have a beautiful colour. Use the tinned ones so that you don't have to soak and cook etc.

Priscilla

I like cannelini (sp) beans in salad with olive oil and lemon juice. They work really well with cooked green beans. Add onion and olives if you have some and you have a great meal.

Thanks for the suggestions. I will try them both. That's a good idea with the vinegar - will have to try that. I usually use apple cider vinegar as a dressing on my salad anyway. Haven't yet tried balsamic vinegar. The dark colour has been putting me off. How different is it from white vinegar and apple cider vinegar in flavour? Anyone know?

Or a small can of 4 beans? I like to drizzle some balsamic vinegar on them and let them sit for a little while before mixing them into my salad.
~Heidi
